Keto Scotch Eggs Recipe

Back in 2016, when we were housesitting in England, Shawn and I found scotch eggs in a grocery store deli. The deli person told us you eat them cold, so that’s what we did. I was hooked.

A traditional scotch egg is a hard-boiled egg wrapped in sausage meat with a breadcrumb coating. I loved the concept but not the carbs, so I started making my own version at home. No flour, no breading, just seasoned pork wrapped around an egg and baked in a muffin tin.

Anytime I wanted a high-protein keto snack, this is what I made. I hadn’t made them in a couple of years until this morning, and I’d forgotten how good they are.

If you want the full story of how we discovered them, it’s over on my travel blog: The Surprising Snack We Found During a Housesit in England.

Keto Scotch Eggs

Makes 6 servings

Per serving: ~280 calories, 19g protein, 21g fat, 1g carbs

Ingredients

  • 1 lb ground pork (your favorite)
  • 1 tsp garlic powder
  • 1 tsp Italian seasoning
  • 1 tsp onion powder
  • 1/2 tsp salt
  • 1/2 tsp pepper
  • 1/2 tsp paprika
  • 6 hard-boiled eggs, peeled

Instructions

Preheat your oven to 400 degrees F. You need a normal sized muffin tin. You don’t have to grease them but I do for flavor with beef tallow.

Mix your pork and all seasonings together and then make 6 even balls. Place 1 in each muffin tin.

Spread the pork around the tin to make room to drop the egg in, then pinch and push to spread the pork evenly around the egg. Or, you can take the ball and with your hands create a hole for the egg, then roll it together with your palms until the egg is fully covered and the meat is even, then drop it in the tin. Either works.

Do this for all 6.

Pop it in the oven for 15-20 minutes or until browned on top.

Take out and let cool for 10 minutes, then scoop out each scotch egg and pat with a paper towel to remove excess grease. Then place into a covered container and let them cool in the fridge for at least 1 hour minimum. I prefer overnight.

Then enjoy.

I like eating them cold, straight out of the fridge. They’re the perfect grab-and-go high-protein snack.

Have you ever tried a scotch egg? If you make these, let me know what you think.
