This is my husband’s 2nd favorite salad. His favorite is my Twisted La Scala Salad.
It’s great for any time of year. Use whatever apples you prefer, type of lettuce, and even the type of nuts. This salad is a winner and never disappoints.

Salad
- 1 large (or 2 small) apples (I use Honeycrisp), cut into matchsticks or cubes
- 1 cup coarsely grated or crumbled old white English cheddar
- 1/2 cup chopped almonds or walnuts
- 1 head butter lettuce, romaine, or iceberg, chopped or ripped
- 1/2 cup thinly sliced red onion
- 2-4 chopped celery stalks
- 1/2 cup dried cranberries or pomegranates
Dressing
- 1/2 cup olive oil
- 1 tsp salt
- 1/2 tsp pepper
- Juice of 1 large lemon or 1/4 cup lemon juice
- 2 TBL red wine vinegar
- 2 TBL minced/chopped garlic
- 1 TBL Dijon mustard
Chicken (Optional)
I cook the chicken tenders in a pan with salt, pepper, onion powder, garlic powder, paprika, and olive oil. Add lemon juice, then butter near the end to crisp them up, and voilà! That’s it, easy peasy, and you can cook them while chopping the salad ingredients.

Mix the dressing ingredients, pour the dressing over the salad, and toss. Let me know if you try it and what variations you make. Enjoy!
